2007 Navarrsotillo Magister Bibendi Crianza

Organic Wine Company 6bottle/$69 minimum

2007 Navarrsotillo Magister Bibendi Crianza
From the Organic Wine Company:

Navarrsotillo was founded in 1995, when Andres, Luis, and Ramon Serrano started converting the family vineyards, fields, and orchards to organic farming standards. Two years later, they made their first wine, and since then have focused efforts on high quality wines with a commitment to caring for the earth.

The selection of wines is rounded out by special products, such as the Rosado, Blanco and single variety wines made with Garnacha, Graciano and Mazuelo grapes. The grapes used for these single variety wines are monitored throughout the ripening process and later selected for the creation of special wines. The vineyards cover more than 60 hectares, all certified by different official bodies for
the monitoring of Organic Agriculture.

The soils are first supplied with nitrogen by sowing green manure crops, and then with organic material such as chipped vine prunings and composted organic manures, used to mulch the ground in the first months of the year. Navarrsotillo wines are aged in barrels made of 20% French and 80% American oak in climate-controlled cellars. Current production volume is about 700,000 kg of grapes a year.

Magister Bibendi is a blend of 90% Tempranillo and 10% Garnacha from some of the vineyard’s oldest vines. It is aged for 12 months in oak barrels and then matured in the bottle at a constant temperature. The wine has a beautiful ruby red color and is rich and complex, with flavors of sweet red cherry perked up by crisp acidity.
